Ingredients

          4 medium tomatoes

          olive oil for upside down, if necessary

          Intake of 100 gm of cooked brown rice is as follows:

          cup freshly grated Parmesan cheese

          ¼ cup crumbled goat cheese

          ¼ cup chopped toasted walnut

          or 2 tablespoons fresh basil, chopped, divided or to taste

          Two cloves of garlic must be minced.

          ¼ cup of Italian seasoned bread crumbs; instructions half should be used for the topping whereas the other half should be used in rolling the meat mixture.

          30 ml Vegetable oil

Directions

1. Remove tops of tomatoes and using a spoon or melon, baller hollow out the middles leaving a 1/4- to a 1/2-inch shell. Remove tomato tops and carmine or mushy portions of the fruit.

2. Rub the bottom of an air fryer basket with the olive oil.

3. In a medium bowl mix cooked rice with Parmesan cheese, goat cheese, walnuts, one tablespoon of basil and garlic. Put the bread crumbs in a bowl and lightly mix with the 1 tablespoon of olive oil. Pack the rice mixture into the tomatoes, then pat with the bread crumb mixture. Put the stuffed tomatoes onto the tray in which the air fryer is to be placed.

4. This goes into the air fryer at 370F/188C until the tomatoes are soft, the fillings are hot and the topping golden – about 15 minutes. Garnish with remaining basil.

 

Cook's Note:

If desired, instead of the goat cheese you may use shredded mozzarella cheese.
